Recipe – Squid, Stuffed and BBQ’d

Stuffed BBQ Squid

Serves: 4        Preparation: 20mins        Cooking: 8mins

  • 6 Whole baby Squid            
  • 1 Small onion, chopped
  • 2 tbs Olive Oil                                          
  • 1 Crushed garlic clove
  • 1 tsp Lemon rind
  • 2 tsp Lemon juice
  • ½ cup fresh breadcrumbs
  • 2 Anchovies
  • 2 tbs toasted pine nuts
  • 2 tbs finely chopped parsley
  • Flaked Salt
  • Freshly cracked Pepper
  • Extra virgin olive oil
  • Lemon Wedges
  • Toothpicks

WE RECOMMEND: Using our 1kg packs of whole cleaned squid.

Cut squid tentacles into small pieces. Heat the oil in a frying pan over medium heat and sauté the onion and garlic until soft. Add chopped tentacles and cook for 1min, then add lemon rind and juice, breadcrumbs, anchovies, pine nuts and parsley, season to taste. Stir well to combine then allow to cool.

To stuff the squid use a teaspoon to place the filing into the squid hoods. Gently pack, do not force the stuffing in and don’t overfill as the squid does shrink slightly during cooking. Secure opening with a toothpick.

Preheat BBQ to medium-high, drizzle squid with oil and cook on the open grill for 4mins each side.

Serve sliced or whole, drizzle with olive oil and serve with lemon.
